"Stir and Season" Saturday

Goodness, I think it's been almost 17 years when I first came to Ohio for college and tried my first "buckeye". A truly yummy delight! It is peanut butter with chocolate...who could not like that combination???

Today, I am sharing with you my Buckeye Bars...they are so yummy...you will have to give them away or may EAT them all yourself!


buckeye bars

1 stick of butter, softened

3/4 cup crunch peanut butter

22 Nilla wafers, crushed(3/4 cup it should make)

2 cups powdered sugar

1/2 tub of 8oz cool whip topping (do not thaw)

3 squares of Baker's semi sweet chocolate

Make it:

Line 8 inch square pan with foil, with ends of foil over the sides. Beat butter and peanut butter till blended; add wafer crumbs; mix well; Gradually add sugar, mixing well. Press onto bottom of pan.

Microwave frozen cool whip and chocolate in bowl on high for one minute; stir; Microwave 13-30 seconds more till chocolate is melted; stir to blend; Pour over peanut butter layer; spread to cover peanut butter layer.

Refrigerate 2 hours. Use foil handles to lift dessert from pan before cutting! Enjoy!

Oh, I LOVE buckeyes!! I grew up in Ohio (Cincy area) and they were a Christmas favorite. Now I usually make them every year. These bars sound very good, too! I may have to try these instead this year.

i adore buckeyes-both of my parents are from there...however, with two of my boys with peanut allergies (!), I'll have to pass-I buy them sometimes, but the homemade ones are always the best...

OMG Sandy! I LOVE buckeyes! I just recently rediscovered them and it brought back so many memories of when my mom would make them at Christmastime! I can't wait to try this recipe! To me, nothing is better than chocolate and peanut butter!!!

Buckeyes are my favorite--my grandmother made them every year (doubled and sometimes tripled the recipe). We would have enough to get us from Christmas to St. Patrick's day!!! They are a treat and a favorite to make for everyone at Christmas!
I'm going to try the recipe--nothing is better than PB and chocolate!
