UPDATE: So many of you have asked..where do I get lemon-pepper pasta?...I have found it at higher end stores. Or places like Trader Joe, Whole Foods or Fresh Market...it can be hard to find but it's worth the "hunt". Also, some of you have asked if you can eliminate "buttermilk"...NO! You will not even know it's there..trust me!

Stir and Season Saturday

Today, I am posting my favorite "pasta salad". I had this at a mother/daughter banquet years ago..before I even had a daughter! I think I was serving at it! It is so delicious..don't let some of the ingredients scare you...you won't even know it is there {buttermilk}!

Lemon-Dill Chicken Salad

5 boneless skinless chicken breast, boiled and chopped up

1 1/2 cup chopped celery

1 box of lemon-pepper pasta

2 1/2 cups of mayo ( just enough to make everything stick)

1/4 cup of lemon juice

2 tsp. dill weed

1 cup buttermilk

salt to taste

Cook chicken and cube. Boil pasta just until done and rinse under cold water. Toss together chicken, pasta and celery. Mix together mayo, dill and lemon juice. Add wet ingredients to chicken mixture. Add buttermilk last. Salt to taste! Put in frig and chill...enjoy with fresh fruit on the side.

Yummm! Buttermilk does not scare me at all. I use it in a lot of dishes but it does scare me to have a big glass of it! Have a nice Saturday!

Yummy! I can use the rest of the buttermilk to make some of the original Ranch dressing. I just did an impromptu thing last week that turned out surprisingly well. Chopped chicken breast, jar of alfredo sauce (I use Bertolli's), and a can of Rotel, mixed in with cooked linguine. It's good hot OR cold! not sure what to call it, though...

This sounds super yummy! Did you know that you can also make a buttermilk substitute with vinegar and milk (not sure about the measurements...sorry)? I don't usually keep buttermilk in the house so I've done it a few times. Thanks for sharing!

I wanted to let you know that I made this today. My daughter was baptized and afterwards I had some family and friends over. This dish is delicious! Everyone went crazy over it. I had a dozen people over and everyone had at least 2 servings, so this recipe makes a good bit. I served some marinated tomatoes on the side and I some Sister Schubert's yeast rolls. Yum! Yum! Thanks for sharing and it will definitely be on our favorites list! Oh, and I did give you all the credit for the pasta dish. Also, I could not find the lemon-pepper pasta so I used penne.
