"Stir and Season" Saturday

Today, I am posting a recipe from a dear friend..."Vicki". This is a friend who cooks a "full course" meal for her 5yr. old and then at 10:00pm waits up for her husband to get home from work and cooks another FRESH, home cooked meal. She is an amazing cook and the "women" in her family cook for days! ! So I am sharing with you her mandarin orange cake..it's yummy and a true delight!

Mandarin orange Cake

1 box yellow cake mix (not the pudding one!)

11 oz mandarin oranges with juice

1/2 cup oil

4 eggs

Combine all the ingredients; mix on low for one minute and then medium for 2 minutes; pour into three 8 inch greased and floured cake pans (the cake really rise); Bake at 325 for 30 minutes.

icing

3 oz vanilla pudding (instant)

20 oz crush pineapple with juice

8 oz cool whip

Blend pudding and pineapple; Fold in cool whip (frig for 20 minutes); Spread b/t layers and then the rest of cooled cake; Refrigerate...take out 1/2 hr before serving. Enjoy!

My family will love it...Pat is a huge pinapple fan and the kids love mandarin oranges!!

I had to giggle at Vicki's comment yesterday....I hope she does start a blog......tell her we will be over to visit when she opens her doors.....keep us posted:)
