"Stir and Season" Saturday

Officially basketball season is over and soccer practice for two of my kids have begun. Which means 4 practices during the week....WHICH means "mom" needs to be planning meals! So this is when I rekindle my "love affair" with my crock pot.

This is SUCH a simple recipe but oh so very yummy!

Salsa Chicken Soft Taco

In the morning take 4 to 5 boneless skinless chicken breast and put them in the crock pot; Pour over an entire jar of mild salsa (your favorite); Cook on low for 8 hours;

After 8 hours open crockpot and cut up chicken....it should just shred apart with the touch of the knife;

Now I take that chicken and quickly drain it (my kids freight over anything that is 'runny'); put back in crockpot;

Then with that chicken make family soft chicken tortillas(soft taco);

warm tortillas~chicken from crockpot~cheese~sour cream~shredded lettuce~chopped tomatoes


Roll up and enjoy! So easy and quick!

{I serve with rice on the side and fresh fruit}

Hey Sandy this is one of my favorite tools in the kitchen for a busy day meal. Try the green enchilla sauce sometime with a boneless pork loin. I sometimes throw in a cut up onion, chopped garlic clove, and a tsp. or 2 of cumin.

I would be interested to hear anymore ideas on really easy healthy crock pot meals.

I am ALLLLLLLLLLLLLLL over this! Girl, we use our crock pot atleast twice a week! I got the Fix it and Forget it cookbook a while back. It's wonderful, but oh how I love getting crock pot recipes from someone "real"! lol! Thanks much! This sounds delicious!

It is funny that you posted a crock pot recipe this morning....I just gave out my famous Corned Beef and Cabbage recipe for St. Patty's day......made in a crock pot of course:)

This is such a great recipe and idea--I have never thought of it before. I'm always looking for inexpensive and easy meal ideas--and always looking for a way to use my crock pot! I don't know how one would get along without it!

I have an on-going love affair with my Crock Pot, too! Aren't they wonderful? Particularly when you're in a pinch for a fast and easy meal. That recipe of yours sounds delish!
