Make Two!

I am a Hit or Miss type of "cook". Some of my dinners are great and some are REALLY bad especially if I try to be REALLY healthy. When they are bad, I don't even look at Mr. Sandy Toes because his expression says it all! Through the years, I don't have to measure as much and can wing it...well, sorta of.

But, I want to be a really good cook. I want making "dinners" to be easy and breazy (is that a word? well, it is for today). I want my son to love my cooking so much that he will never want to leave when he gets older (that kind of cooking).

Every week, I stress about meal planning and grocery shopping. I have done the month planning, the week planning, the "frozen" planning and no planning at all. I was at a friend's house yesterday and she served me pulled pork sandwiches. She seemed at such ease with meal planning. She told me that when she makes a casserole or really anything...she makes TWO! I thought about that and I think I am going to try it. I also am going to try her crock pot pulled pork which makes a lot...so this will be my first frozen "make ahead" meal.

It's a crazy recipe but it was so good! So here is to a new beginning of cooking...Make Two! I have to do something...soccer season is staring me in the face and the running will begin. It's feeling almost Spring like outside and I don't want to be in the kitchen all day!

Pulled Pork Sandwiches

1 shoulder pork loin bone -in....(I don't know a piece of pork!)

1 can of ginger ale

2 onions

Cut up the one onion and layer at bottom of crock pot; Put pork on top; Pour can of ginger ale over pork; Cut up the other onion and lay on top of pork; Cook on low for 12 hours; After shred pork and dump out juices (try to save onions if you like them); Return to crock pot and put your favorite BBQ in it; Cook on low for one more hour.

My friend says it freezes REALLY well!

I often make 2 when I'm cooking as well. It's so nice to have a meal in the freezer!

What a great recipe...pulled pork sandwiches are so GOOD! I grew up in an area of the South where that's what you ate A LOT! I'll give it a try!

So glad you tried the recipe! I can't take credit... I found the recipe on Food.com. It was their #1 pork recipe with over 300 reviews! I usually get a boneless pork shoulder (from Costco) to make my life even easier. Enjoy!
