I made a big New Year's Day meal. I made some dishes I normally don't make...one being the best mash potatoe recipe I know! Every ingredient is fattening except the salt and pepper but perfect with any {meat}.
it was NOT a good start to my resolutions but I guess if I don't eat it for breakfast on the 2nd-all is well!
Baked mash potatoes
8 peeled and boiled potatoes
1 cream cheese 80z
16 oz of sour cream
1/2 cup of melted butter
2.5 cups of cheddar cheese
1/4 cup of chopped green onion
1/2 cup of milk
salt and pepper -1 ts. each
8 oz bacon (cooked and crumbled)
Mash the potatoes; Mix in the sour cream, cream cheese, 1.5 cups of cheese, green onion, butter, milk and seasons. Put in a greased 9 by 13 pan; Bake at 350 for 40 minutes; When you take it out of the oven put the bacon on top of casserole plus sprinkle the 1 cup of cheese on top.
Enjoy and pretend it's still 2009!

I don't think there's enough fat in those.. why not add an extra stick of butter or something? LOL.. Yummy.
