"Stir and Season" Saturday

Yesterday, was the first day of Spring... I already am digging through my summer recipes. I love easy and "make ahead" meals for summer. We are always on the go and the last thing I want is to have to come home and make a full dinner.

This is one of my favorite summer evening meals b/c I can make it ahead. These warm sandwiches are delightful and perfect with fresh fruit and handful of chips.

Baked Ham and Swiss Sandwiches

1/2 cup butter or margarine

2 T minced onion

1 T poppy seeds

1 T of Dijon mustard

1/2 t of worcestershire sauce

8 hamburger buns, split

16 ounce cooked ham

8 slices of Swiss cheese

Combine first 5 ingredients, stirring well. Spread butter mixture evenly on cut sides of hamburger buns. For each sandwich, place 2 slices of ham and 1 slice of cheese on bottom half of each bun; cover with top half of bun. Wrap each sandwich in aluminum foil.

To SERVE: Place aluminum foil wrapped sandwiches on a baking sheet. Bake at 350 for 20 to 25 minutes or until sandwiches are thoroughly heated and cheese is melted; Makes 8.

{I make these the night before then warm right before eating}

Enjoy!

I made that meal at "Dream Dinners" and it was so delish! My husband asked if I wrote down the recipe-and I said NO! Now I can give this to him to make it-thank you!!!! Love these sandwiches. They actually freezed well, and baked in the oven great...

Hello friend I saw where your family has been sick I sure hope that everyone is on the mend. What a great way to put a smile on sick faces then to celebrate St.Patties day the way you do. Good Job!!! I have a similiar recipe for those sandwhiches however yours is much much easier! That sounds like a good Sunday lunch. We are always rushing home and I am stressed trying to get lunch prepared, diapers changed and Sunday clothes off and play clothes on. Thanks for the idea! I have also visited the two websites you gave. I can't wait to read more from them. Take care and have a blessed weekend!

Hi there Sandy Toes! I've been so blog absent I had to just catch up with what you've been up to for a bit!
You guys have been down and out with the strep bug I see. Not fun at all. I've been battling ear infections with Miss Priss. We got lucky with some yummy (in her opinion!) tasting meds. Hope you guys are on the mend.
This recipe sounds so good, as all of yours always do.
So glad you're getting a new mixer! I need to check mine and see if it was a recall. It's not been acting 100% 'right' lately. Thanks for that info hun!
Wishing you all a happy and healthy weekend ahead~ xo Les

I am ready for Springtime eating too. Tonight I fried chicken, made potato salad and a nice cool cucumber salad. I will have to try your sandwich recipe. I have made that Lemon-Dill Chicken Pasta several times and get raves everytime.
